Mexican Mix

This is an easy casserole that incorporates every type of Americanized Mexican food you love. Make this dish for guests, take it to socials, or simply eat it with your family. Also, if you have other ideas be sure to add or take away ingredients. The recipe can easily be altered to please your taste buds!

6-8 tortillas

1 lb browned, ground beef

1 cup corn

1 can black beans, drained and rinsed

2 cups salsa

1 1/2 cup cheddar cheese

Preheat oven to 350 degrees.

Grease a 9 × 13 casserole dish.

Cut or tear tortillas into bite sized pieces.

Mix together all ingredients in a large bowl.

Pour mixture into the dish and spread until full.

Bake for 40 minutes.

*Optional: After 20 min. sprinkle extra cheese on top then place the dish back in the oven for the remaining 20 min.
